Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • Water (as needed)
  • 1 tbsp ghee (clarified butter)

For the Achari Paneer Filling:

  • 2 tbsp oil
  • 1 tsp Daichi fenugreek powder (methi)
  • 1 tsp Daichi fennel seeds (saunf)
  • 2 tbsp Daichi mixed pickle (achaar)
  • 1 tsp Daichi turmeric powder
  • 1 tsp Daichi cumin powder (jeera)
  • 1 tsp Daichi garam masala
  • 1 tsp Daichi red chilli powder
  • 200 grams paneer, cut into cubes
  • 1 medium onion, thinly sliced
  • Salt to taste

For Cooking the Parathas:

  • Daichi Ghee for cooking

Instructions:

  • Prepare the Dough:
    • In a mixing bowl, combine 2 cups of all-purpose flour with enough water to form a soft dough.
    • Add 1 tablespoon of ghee to the dough and knead until smooth.
    • Cover and set aside for at least 15-20 minutes to rest.
  • Make the Achari Paneer Filling:
    • Heat 2 tablespoons of oil in a pan over medium heat.
    • Add 1 teaspoon of fenugreek powder and 1 teaspoon of fennel seeds, stirring until they become aromatic.
    • Stir in 2 tablespoons of mixed pickle, then add 1 teaspoon each of turmeric powder, cumin powder, garam masala, and red chili powder. Mix well.
    • Add the paneer cubes and sliced onions to the pan. Season with salt to taste.
    • Cook for about 5-7 minutes, stirring occasionally, until the paneer is well coated and the onions are soft.
  • Roll and Cook the Parathas:
    • Divide the dough into equal portions and shape them into small balls (peda).
    • Roll each ball into a thin, round paratha using a rolling pin and some flour to prevent sticking.
    • Heat a skillet or griddle over medium heat. Cook each paratha on both sides until golden brown, brushing with ghee for a rich flavor.
  • Assemble the Frankie:
    • Place a paratha on a flat surface and spread a generous portion of the achari paneer filling along one edge.
    • Roll the paratha tightly around the filling to form a Frankie.
    • Optionally, you can wrap the Frankie in parchment paper or aluminium foil for easy handling.

Tips:

  • Pickle Choice: Use your favourite mixed pickle for a personalised touch. Mango or lime pickle will also work wonderfully.
  • Serving Suggestions: Serve the Frankie with a side of mint chutney or a dollop of yoghurt for added flavour.
  • Make it Spicy: Adjust the red chilli powder to your heat preference, or add some chopped green chilies for an extra kick.
